Complexities Leading to Weight Gain
The simplest understanding of this comes from looking at the neurochemicals in our brain. If our brain is over stimulated from too much stress and cortisol, not enough sleep, bad food chemicals such as mono-sodium-glutamate (MSG) and artificial sweeteners such as aspartame (Nutri-Sweet) then it is not going to feel at ease or calm.
When our brain is stressed then we grab comfort foods like carbs, chips, sweets, and high glycemic treats. If I have a bag of cookies and I start to eat them in a state of stress or unrest then the first thing that occurs is that these high glycemic treats release a fast burst of sugar to my brain.
Our brain can only use sugar calories, it can not process fat or protein, so this burst of sugar causes a spike of adrenaline or epinephrine. This feels good to a tired brain and we feel “alive.”
As the brain senses the rise in epinephrine it engages a mechanism to quickly balance this spike in excitation by rapidly producing a counter spike of calming serotonin. This is the buzz we crave.
We run around all day in our hurried and over committed lives making very little serotonin due to our never ending stress level and when this burst of serotonin hits our brain it feels like heaven on earth. Even if it only lasts 20 minutes it’s worth the sin to feel that rush and wave of euphoria. We are hooked. We are carb addicts. So tomorrow when I feel rushed and uneasy what do you think I will be looking for? Where’s that bag of sweet treats?
With insulin resistance we begin to make more insulin in an attempt to keep our blood sugar down but this insulin is a problem. Insulin tells our body . . . say it with me now . . . “stop burning fat.” What many people fail to realize is that the bread, rice, pasta and potato all carry as much if not more sugar than the chocolate bar that we are trying to avoid.
