Every time the average American eats their healthy fruits and veggies, they also consume residues of synthetic chemicals from insect killers, fungicides and fertilizers. You could avoid all that by choosing to buy organic, but that’s not a budgetary reality for many in today’s economy. What to do?

Know what fruits and vegetables have the most toxins and choose to buy only those varieties organic. Let’s start with the #1 worst item on the list for 2011. According to the Environmental Working Group the most toxic produce item in American shopping carts is……drum roll, please…….celery.

That’s right. Those innocent-looking pale green stalks host the highest dollop of unpleasantries of any item in the produce section in 2010. (See EWG’s list of worst and best produce options .)

Choose to buy this item organic instead of eliminating it from your routine because calorie for calorie, celery provides a surprising number of nutrients. Its low-calorie count (just 19 calories per cup) combined with its high-fiber content, which helps to make you feel full, make celery an excellent food for promoting weight control.

Heart Health
Celery’s ability to reduce blood pressure has long been recognized by eastern medical practitioners. Animal studies in the west have also shown 12 to 14 percent reductions. Celery is also a good source of potassium, a mineral that is necessary for maintaining healthy blood pressure. Celery is also a good source for folate, vitamin B6 and fiber which have all been associated with reduce heart disease risk.

Celery is an excellent source of vitamin C, a nutrient that may help to protect against chronic disease. In one large-scale study, researchers found that men with the highest vitamin C levels in their blood (dietary intake) had a 71% reduced risk of dying from heart disease, while women with the highest levels had a 59% reduced risk.

Cholesterol
An 8-week study, where animals bred to have high cholesterol were fed a water-based solution of celery, significantly lowered their total cholesterol by increasing the secretion of bile acid, which helps to remove cholesterol from the body.
